Upon opening residents of Hitchin will be able to take advantage of the new bakery's Christmas Menu, including new product launches, such as three flavours of the new GAIL's Panettone. 

The menu consists of a variety of Christmas treats including the Sticky Brioche Christmas Buns and Raclette Escargots, to festive pantry items, such as the Ginger Loaf and Green Tomato and Apple Chutney. 

GAIL's Panettone will feature, made using a traditional Italian sourdough starter and topped with an abundance of dried fruits, peels and nuts. With 3 different flavours, including Pistachio and Lemon, White Chocolate and Mandarin and Classic Candied Fruit. 

The new shop will also have returning favourites such as Penguin Biscuits, The Christmas Smoked Turkey and Swiss Cheese Sandwich and Mince Pies, made with sweet Jonagold apples.

GAIL's was started by Yael (Gail) Mejia in the early 1990's serving top chefs and food venues in London. 

In 2003, Tom Molnar and a few friends joined Yael's premium wholesale craft bakery and grew the business by opening modern neighbourhood craft bakeries that bring communities together to enjoy chef-quality baking. 

The first GAIL's bakery opened in 2005 in Hampstead, serving fresh, handmade bread, sandwiches, salads, pastries, and cakes, alongside their carefully sourced house blend speciality coffee and barista made drink range.

The new opening incorporates subtle elements which GAIL's believes "reflect Hitchin's rich tapestry of architectural styles using timber framed walls and herringbone flooring". 

The bakery is located on Bancroft and features a hidden courtyard at the back of the building leading to a large outdoor area on Grammar School Walk inviting customers in from front to back and pays homage to Hitchin's distinctive passageways which are a direct consequence imposed by the Medieval street plan.
