New owners take over popular Hitchin fish and chip shop

A long-established Hitchin fish and chip shop has announced a change of ownership, with its new proprietors promising to maintain the standards customers have come to expect.
Polcaro's Fish and Chip Shop has revealed that Sandeep and Sunita have taken over the business from previous owners Silvio and Tina.
The new owners announced the change in a social media post, saying they had been working closely with Silvio over recent weeks to ensure a smooth handover.
They said maintaining the quality and standards associated with Polcaro's would be a priority.
Sandeep and Sunita said: "We know how much this shop means to its regular customers and the local community, and we're incredibly excited to take it forward."
Customers may see some changes at the shop as the new owners put their own stamp on the business, although they stressed that "great food and friendly service" would remain at the heart of Polcaro's.
The pair also thanked Silvio for his help, advice and support throughout the transition.
Addressing the shop's longstanding customers, they added: "To everyone who has supported Polcaro's over the years, we're looking forward to getting to know you all and welcoming familiar faces, as well as plenty of new ones through the door."
Polcaro's has been trading since 1983, according to the business's branding, giving the fish and chip shop more than four decades of history.
