REVIEW: Hitchin’s “Craft & Cleaver” –Hertfordshire’s Slice of American Barbecue

Located in a Grade II-listed building on Bancroft—formerly home to Prezzo—Craft & Cleaver has become a lively fixture on the Hitchin food and drink scene since opening in December 2023.

The original Craft & Cleaver launched in St Albans nearly a decade ago, born from founder Adam Richardson's U.S. road trip inspiration. The concept? Marry craft beer—a Hitchin favourite—with the smoky magic of fire-cooked meats.

What many may not know is that, in May last year, the Hitchin branch unveiled a rear garden oasis. With seating for 50—including four heated huts—this hidden gem offers a welcome escape from the buzz of the High Street.

The cheerful team, led by local man Connor Burke since May, bring a warm, friendly vibe to the restaurant.

As you'd expect from an American-inspired eatery, the portions are generous—no one leaves hungry. But if you do want to take the flavours home, their house BBQ and hot sauces are available for £6.50 a bottle. For those with a sweet tooth, the cheesecake is surprisingly light given its hefty serving.

Menu highlights include the signature "Crafty Burger" and "C&C Caesar Salad," but the real draw lies in the burnt ends, BBQ Trays and smoked meat combos—bold, flavourful, and deeply satisfying.

To drink, there's plenty to choose from: craft beers, rotating guest kegs, cocktails, or a refreshing iced tea.

Craft & Cleaver is quickly becoming part of the local fabric. They sponsor Hitchin Rugby Club, host community favourites like the Bubble Running group, and have popped up in Market Square events. Music lovers can enjoy live performances on the first Saturday of each month.

Every Tuesday, you can grab a meat combo and any signature cocktail for £29.50—a great midweek treat.

Open until midnight on Fridays and Saturdays, C&C has also cemented its place on Hitchin's weekend bar circuit. It's home to the town's only (and possibly first) 18-foot shuffleboard table, with rumours of an upcoming collaboration with The Beer Shop on Hermitage Road.

Verdict: With hearty food, a fun vibe, and strong community ties, Craft & Cleaver is bringing authentic American BBQ spirit to the heart of Hitchin.
